Simple & Delicious Gluten Free Banana Bread

Here's a simple and delicious gluten-free banana bread recipe: This recipe is adaptable, so feel free to customize it to your preferences by adding your favorite mix-ins or adjusting the sweetness level to suit your taste.

  • 9×5-inch loaf pan
  • bowl
  • fork or potato masher
  • 3 Ripe Bananas
  • 2 Large Eggs
  • 1/3 cup Melted coconut oil or melted butter
  • 1/2 cup Honey or maple syrup (adjust according to sweetness preference)
  • 1 tsp Vanilla Extract
  • 1 3/4 Cup Gluten-free all-purpose flour blend
  • 1 tsp Baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Optional add-ins: chopped nuts, chocolate chips, or dried fruit
  1. Preheat your oven to 350°F (175°C).

    Grease a 9×5-inch loaf pan or line it with parchment paper.

    In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.

    Add the eggs, melted coconut oil or melted butter, honey or maple syrup, and vanilla extract to the mashed bananas. Mix until well combined.

    In a separate bowl, whisk together the gluten-free all-purpose flour, baking soda, baking powder, and salt.

    Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

    Be careful not to overmix.

    If using any optional add-ins such as nuts, chocolate chips, or dried fruit, gently fold them into the batter.

    Pour the batter into the prepared loaf pan and spread it evenly.

    Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

    Remove the banana bread from the oven and allow it to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

    Once cooled, slice and serve. Enjoy your gluten-free banana bread!

Original Betty Crocker Banana Bread 1986.  Converting this recipe to gluten- and dairy-free is easy.

Substitute a dairy-free margarine or butter and for the flour, my friend uses a combination of Almond, Cassava and Rice flour. You can use cup for cup gluten-free flour. When I baked with my friends combination, it was so much better than straight up cup for cup gf flour.  She told me to use 1 C Almond flour, 1 C Cassava flour and 2/3 C rice flour. Don’t forget your optional add-on. Ins. 1/2 C. of nuts, chocolate chips, dried fruit.  Also, I experimented with cutting the sugar way down in this recipe and it was still very good!
